Celebrate with Irish Soda Bread. Easy - delicious - nutritious
Ingredients: 3 cups flour 1 cup raisins 1/4 cup sugar 1 tbsp. caraway seeds (optional) 2 tsp. baking powder 1 teaspoon salt 1/2 tsp. baking soda 1 1/2 cups lowfat buttermilk
Directions: 1) Spray an 8 or 9 inch round cake pan with vegetable cooking spray
2) Combine all dry ingredients in large bowl, stir to coat raisins thoroughly
3) Add buttermilk, stir until well-mixed and soft dough forms
4) Turn out of bowl onto floured surface
5) Knead dough just a few times until it all holds together
6) Pat dough into prepared pan - not all the way to the edge
7) Bake at 350 degrees for 45 minutes until a toothpick comes out clean - bread should be golden
8) Let cool in pan 5 minutes, loosen underneath with a knife, then cool bread on a rack for 10 or 15 minutes.
Really wonderful served warm! |
